Creamy pepper sauce

The 2022 version of the classic, full, creamy pepper sauce. Plant Based and allergen free.

Serves: 10

Ingredients:

Shallot, finely chopped15 g
Olive oil10 g
Green peppercorns20 g
JusBros. Vegetable Jus2,5 dl
Flora 15% plant-based cream1 dl
Salt and pepperTo taste

Method:

  • Sauté the shallot in olive oil and deglaze with the green peppercorns and their liquid.
  • Add the Vegetable Jus and bring to a boil.
  • Add the cream and season to taste.
  • Season with salt and pepper to taste.

Cantharellenjus

A beautiful, umami-rich seasonal jus. Plant-based and allergen-free.

Serves: 10

Ingredients:

Shallot, finely chopped15 g
Olive oil10 g
Morels50 g
Chanterelles50 g
White port0,3 dl
Madeira0,3 dl
JusBros. Vegetable Jus3 dl
Salt and pepperTo taste

Method:

  • Sauté the shallot in olive oil.
  • Add the morels and chanterelles.
  • Deglaze with Madeira and let it reduce slightly.
  • Add the Vegetable Jus and season to taste.
  • Season with salt and pepper to taste.

Full-Bodied Olive Jus

As the name suggests, this jus is rich and juicy. Plant-based and allergen-free.

Serves: 10

Ingredients:

Shallot, finely chopped15 g
Taggiasca olives30 g
JusBros. Vegetable Jus0,35 dl
ThymeTo taste
RosemaryTo taste
Taggiasca and green Dolce olives, finely chopped20 g
Salt and pepperTo taste

Method:

  • Sauté the shallot in the oil from the olives.
  • Add the 30 g of Taggiasca olives.
  • Add the Vegetable Jus and some finely chopped thyme and rosemary.
  • Blend until smooth with a hand blender and bring to a boil.
  • Pass the sauce through a fine sieve and add the 20 g of finely chopped Taggiasca and Dolce olives.
  • Season with salt and pepper to taste.

Creamy Mushroom Sauce

The 2022 version of the classic, rich, creamy mushroom sauce. Plant-based and allergen-free.

Serves: 10

Ingredients:

Shallot, finely chopped15 g
Olive oil10 g
Mini mushrooms120 g
ThymeTo taste
White wine0,5 dl
JusBros. Vegetable Jus2,5 dl
Flora 15% plant-based cream1 dl
Salt and pepperTo taste

Method:

  • Sauté the shallot in olive oil.
  • Add the mushrooms and thyme.
  • Deglaze with white wine.
  • Add the Vegetable Jus and bring to a boil.
  • Add the cream and bring back to a boil.
  • Season with salt and pepper to taste.
