The men behind JusBros. are Vincent van der Zalm and Richard Leidekker, two professional chefs who have surely earned their stripes in the kitchen.
Vincent has over 17 years of experience in various star restaurants. Since 2020, Vincent has focused on project management, culinary consultancy and catering.
Richard brings more than 25 years of culinary experience. First in renowned restaurants and in recent years as an Innovation Chef, where he focused on developing plant-based food ingredients for the professional market.
The shared passion for innovation and good food has led to both chefs entering into this wonderful collaboration.
Richard explains: There is an increasing need for tasty plant-based dishes and the “New Dutch cuisine”, with its 80/20% ratio, appeals enormously to us.
To serve surprising, tasty vegetable dishes, you need to use fresh and high-quality vegetables. But how do you incorporate that into your sauce? For your sauces, you look for a gravy that gives depth and complexity to your dish. This of course requires a lot of time, knowledge, skill and creativity.
Vincent adds: In recent years I have increasingly focused on plant-based cuisine. It is an interesting new cuisine and a great challenge to serve plant-based dishes that really provide an experience at the table.
We all know the pressure on kitchens at the moment and we think we can help chefs by bringing this beautiful gravy to the market.
